Instructions
Place the chicken breast into the slow cooker. Season it with Italian seasoning, salt, and pepper.
Add the minced garlic and sliced onion to the slow cooker.
Pour in the diced tomatoes (with their juice), balsamic vinegar, and chicken stock.
Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until tender.
Serve whole or shred, over pasta or rice; garnish with parsley or basil.
