  • 2.5 lbs chicken breast
  • 1 Tbsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 Tbsp minced garlic
  • 1 small white onion, sliced
  • 14.5 oz diced tomatoes (undrained)
  • 0.5 cup balsamic vinegar
  • 0.5 cup chicken stock or broth
  • No alcoholic drinks allowed, please substitute with a non-alcoholic option.

Instructions
 

  • Place the chicken breast into the slow cooker. Season it with Italian seasoning, salt, and pepper.
  • Add the minced garlic and sliced onion to the slow cooker.
  • Pour in the diced tomatoes (with their juice), balsamic vinegar, and chicken stock.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until tender.
  • Serve whole or shred, over pasta or rice; garnish with parsley or basil.

Notes

For a heartier meal, consider adding vegetables like bell peppers or zucchini to the slow cooker. This dish pairs wonderfully with a side salad or crusty bread.
