  • 2 pounds boneless skinless chicken thighs
  • 1 cup brown sugar
  • 3 cups soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • 1 third cup bourbon or substitute No alcoholic drinks allowed, please substitute with apple juice or chicken broth.

Instructions
 

  • Season both sides of the chicken thighs with Kosher salt and pepper. Place them in the slow cooker, ensuring they are spread out evenly for even cooking.
  • In a medium bowl, mix the bourbon (or substitute), brown sugar, soy sauce, and minced garlic until well combined. Pour this sauce over the chicken in the slow cooker.
  • Cover and cook on low for 4 hours or on high for 3 hours. For best results, use the low setting to allow the flavors to meld beautifully.
  • Thirty minutes before the chicken is done, create a slurry by mixing cornstarch and cold water in a small bowl. Whisk this slurry into the sauce in the slow cooker to thicken it, which will enhance the texture of the sauce.
  • Once cooked, serve the Bourbon Chicken over rice, and garnish with sliced green onions for a fresh touch. Enjoy the delightful blend of flavors!

Notes

For a thicker sauce, let the Bourbon Chicken cook uncovered for the last 30 minutes.
