Ingredients
  

Main Ingredients

  • 1.5 pounds boneless chicken breast cut into pieces
  • 3 medium carrots peeled and diced
  • 3 stalks celery diced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 6 cups low-sodium chicken broth
  • 1 cup water
  • 2 leaves bay leaves
  • 1 teaspoon Italian seasoning or more to taste
  • 2 cups cheese tortellini
  • none chopped fresh parsley for serving, if desired
  • none salt and pepper to taste

Instructions
 

  • In a slow cooker, combine all ingredients except for the tortellini.
  • Cook on low for 6 hours.
  • Remove the cooked chicken from the slow cooker, shred or cube it, and return it to the slow cooker.
  • Add the tortellini and cook for an additional 15 minutes or until the tortellini is fully cooked.
  • Season with salt and pepper to taste. Remove and discard the bay leaves.
  • Serve immediately, garnished with chopped parsley if desired. For added flavor, consider adding a sprinkle of grated Parmesan cheese before serving.
