  • 3 large sweet onions sliced
  • 4 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon granulated sugar
  • 1 pound ground beef
  • 1 cup Italian herb bread crumbs
  • 1 cup milk
  • 1 large egg
  • 1 ounce French onion soup mix
  • 0.5 cup cooking sherry (No alcoholic drinks allowed, please substitute with beef broth)
  • 0.5 teaspoon Worcestershire sauce
  • 4 ounces Swiss, Gruyere, or Provolone cheese
  • 1 sprig Fresh thyme for garnish

Instructions
 

  • Slice the onions and spread them in the bottom of a 6-quart slow cooker. Sprinkle salt, pepper, and sugar over the onions. Place butter and olive oil on top. Cook on LOW for 12 hours.
  • In a bowl, mix the ground beef, bread crumbs, milk, egg, and onion soup mix. Shape into a loaf.
  • Pour cooking sherry and Worcestershire sauce over the onions. Place the meatloaf on top. Cook on HIGH for 3 hours or until the meat reaches 160°F.
  • Place the cheese over the meat and continue cooking for an additional 20-30 minutes or until the cheese melts.
  • Serve the meatloaf sliced with onions and sauce spooned over the top. Garnish with fresh thyme.

Notes

For a richer flavor, you can caramelize the onions before placing them in the slow cooker.
