Slow Cooker French Onion Meatloaf

  • 4 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon granulated sugar
  • 1 pound ground beef
  • 1 cup Italian herb bread crumbs
  • 1 cup milk
  • 1 unit egg
  • 1 ounce French onion soup mix
  • 1 cup beef broth No alcoholic drinks allowed, please substitute with a non-alcoholic option.
  • 1 teaspoon Worcestershire sauce
  • 4 ounces Swiss, Gruyere, or Provolone cheese
  • 1 sprig Fresh thyme

Instructions
 

  • Slice the onions and spread them in the bottom of a 6-quart slow cooker. Sprinkle salt, pepper, and sugar over the onions. Place butter and olive oil on top of the onions. Cook on LOW for 12 hours.
  • In a bowl, mix the ground beef, bread crumbs, milk, egg, and onion soup mix. Shape the mixture into a ball or oval.
  • Pour cooking sherry and Worcestershire sauce over the onions in the slow cooker. Place the meatloaf on top of the cooked onions. Cook on HIGH for 3 hours or until the meat registers 160°F.
  • Place cheese over the top of the meatloaf and continue cooking for 20-30 minutes longer or until the cheese is melted.
  • Serve the meatloaf sliced with onions and sauce spooned over the top. Garnish with fresh thyme.

Notes

For a richer flavor, you can caramelize the onions before placing them in the slow cooker.
