  • cup low-sodium soy sauce
  • cup hoisin sauce
  • cup low-sodium chicken broth
  • 2 tablespoons honey or agave nectar
  • 2 tablespoons minced ginger
  • ½ teaspoon chili-garlic sauce or to taste
  • 2 ¼ pounds boneless skinless chicken thighs trimmed of fat
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sliced green onions for garnish

Instructions
 

  • In a medium bowl, whisk together the hoisin sauce, chicken broth, honey, minced ginger, and chili-garlic sauce until well combined.
  • Place the trimmed chicken thighs in the bottom of your slow cooker. Pour the prepared sauce over the chicken, ensuring it's well coated.
  • Cover and cook on low for about 2 hours, or until the chicken is cooked through and tender.
  • If desired, mix the cornstarch and water in a small bowl until smooth. Stir this mixture into the slow cooker and cook on high for an additional 15-20 minutes until the sauce thickens.
  • Serve hot, and enjoy the delightful combination of sweet and savory flavors!
  • In a medium bowl, whisk together the soy sauce, hoisin sauce, chicken broth, honey (or agave nectar), minced ginger, and chili-garlic sauce until well combined.
  • Place the trimmed chicken thighs in the bottom of your slow cooker. Pour the prepared sauce over the chicken, ensuring it's well coated.
  • Cover and cook the chicken on HIGH for 1 ½ to 2 hours or on LOW for 4 hours, until the chicken is fully cooked and tender.
  • Once cooked, transfer the chicken to a cutting board. Let it cool slightly, then shred it using two forks or your hands.
  • Pour the remaining sauce from the slow cooker into a small saucepan. In a separate small bowl, whisk together the cornstarch and water until smooth, then add this mixture to the sauce.
  • Bring the sauce to a boil over medium heat, whisking frequently. Cook for about 4 to 5 minutes, or until the sauce thickens slightly.
  • Return the shredded chicken to a bowl or back into the slow cooker to keep warm. Pour ¾ cup of the thickened sauce over the chicken and toss to coat. Reserve the remaining sauce for serving.
  • Serve the chicken garnished with sliced green onions, and enjoy it over rice or with stir-fried vegetables!

Notes

For a spicier kick, adjust the amount of chili-garlic sauce to your taste. This dish pairs wonderfully with steamed rice or a side of vegetables for a complete meal.
