  • 1 tbsp olive oil
  • 2 lbs boneless skinless chicken thighs
  • 1 sweet onion sliced thin
  • 3 garlic cloves minced
  • 1 cup roasted red peppers chopped (or peppadew peppers)
  • 1 cup olives any kind
  • 1/2 cup chicken broth
  • 1 tbsp capers optional
  • 1 tsp oregano
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Juice of 1 lemon for serving

Instructions
 

  • In a sauté pan over medium-high heat, add the olive oil. Once hot, brown the chicken thighs on both sides for about 4-5 minutes. This step adds depth to the flavor, so don’t skip it!
  • Remove the chicken and set it aside. In the same pan, add the sliced onions and minced garlic. Cook for 4-5 minutes, stirring occasionally, until the onions are tender and fragrant.
  • Transfer the browned chicken, cooked onions, garlic, and all remaining ingredients into a slow cooker.
  • Cook on low for 4 hours, or until the chicken is fork-tender. Make sure to check for doneness with a fork; the chicken should easily pull apart.
  • Season with salt and pepper to taste. Before serving, add a squeeze of fresh lemon juice for a bright finish.

Notes

Feel free to add your favorite vegetables to the slow cooker for extra flavor and nutrition. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
