  • 3 pound boneless beef chuck roast
  • 1.5 cup ketchup
  • 0.25 cup packed brown sugar
  • 0.25 cup barbecue sauce
  • 2 tablespoon Worcestershire sauce
  • 2 tablespoon Dijon mustard
  • 1 teaspoon liquid smoke (optional) for a smokier flavor
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon pepper
  • 12 piece sandwich buns
  • 1 cup sliced onions optional
  • 1 cup dill pickles optional
  • 1 cup pickled jalapenos optional

Instructions
 

  • Cut the beef roast in half and place it in a 3- or 4-quart slow cooker.
  • In a small bowl, mix together the ketchup, brown sugar, barbecue sauce, Worcestershire sauce, Dijon mustard, liquid smoke (if using), salt, garlic powder, and pepper. Pour this sauce over the beef in the slow cooker.
  • Cover and cook on low for 8-10 hours until the meat is tender.
  • Remove the beef from the slow cooker and let it cool slightly. Skim any fat from the cooking liquid.
  • Shred the beef using two forks and return it to the slow cooker. Cover and cook for an additional 15 minutes until heated through.
  • Using a slotted spoon, place about 1/2 cup of the beef onto each sandwich bun.
  • Serve with sliced onions, dill pickles, and pickled jalapenos if desired.

Notes

For a smokier flavor, add the optional liquid smoke. Customize your sandwiches with your favorite toppings like cheese or coleslaw.
