  • 32 oz. hash browns or fresh diced potatoes
  • 14 oz. beef kielbasa sausage cut into small pieces
  • 1 small onion diced
  • 2.5 cups shredded cheddar cheese
  • 10.5 oz. cream of mushroom soup
  • 0.5 cup sour cream
  • 1 tsp creole seasoning or your favorite blend
  • to taste salt and pepper

Instructions
 

  • In a greased slow cooker, combine the hash browns, beef kielbasa, diced onion, and 2 cups of shredded cheddar cheese. (If using fresh diced potatoes, remember to adjust the cooking time accordingly.) You may also sauté the sausage and onions beforehand for added flavor.
  • In a separate bowl, mix together the cream of mushroom soup, sour cream, creole seasoning, salt, and pepper until well combined.
  • Pour the soup mixture over the hash brown mix in the slow cooker and stir well to ensure everything is evenly coated.
  • Sprinkle the remaining shredded cheese on top for a delicious cheesy crust.
  • Cook on low for 6 hours or on high for 4 hours. Make sure the potatoes and onions are cooked through but not overdone.
