  • 2.2 lbs skinless boneless chicken thigh fillets, trimmed and quartered
  • 2 tbsp cornflour (cornstarch)
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 1 tbsp rice vinegar or substitute with apple cider vinegar or white wine vinegar
  • 1 tbsp sesame oil
  • 2 tbsp dark soy sauce
  • 4 cloves garlic, peeled and minced
  • 0.5 cup chicken stock
  • 2 tbsp unsalted butter, chopped into small pieces
  • 0.5 cup honey

Instructions
 

  • Place the quartered chicken thighs into the slow cooker.
  • In a mixing bowl, combine the cornflour, salt, pepper, garlic powder, paprika, rice vinegar, sesame oil, dark soy sauce, and minced garlic. Stir until well mixed and the cornflour is fully absorbed.
  • Add the chicken stock, butter, and honey to the bowl. Don’t worry if the butter is lumpy; it will melt during cooking.
  • Pour the honey garlic sauce mixture over the chicken in the slow cooker and stir to combine.
  • Cover the slow cooker with a lid and cook on high for 3-4 hours or on low for 5-6 hours. If possible, stir the mixture once during the last hour or two of cooking to help blend the sauce.
  • Once cooked, serve the chicken over boiled rice or egg fried rice, and top with chopped spring onions and sesame seeds.

Notes

For a bit of heat, consider adding a pinch of red pepper flakes to the sauce. This dish pairs well with steamed vegetables for a complete meal. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
