  • 3 pounds Yukon gold potatoes, cut into 1.5-inch pieces
  • 1 small onion, diced
  • 1 pound smoked sausage, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoons Creole or Cajun seasoning
  • 1 pound green beans, cut into 3-inch pieces
  • 1 ounce onion soup mix
  • 0.5 teaspoon garlic powder
  • 1 stick butter

Instructions
 

  • In your slow cooker, combine the cut potatoes, diced onion, green beans, and sliced sausage.
  • Drizzle the olive oil over the mixture, then sprinkle in the salt, pepper, Creole or Cajun seasoning, and onion soup mix. Toss everything together well to ensure all ingredients are coated evenly for maximum flavor.
  • Place the stick of butter on top of the mixture. This will melt into the dish, enhancing the richness of the flavors.
  • Cover the slow cooker and set it to cook on Low for 6 to 7 hours or on High for 4 to 5 hours. The dish is ready when the potatoes are tender and the flavors have melded beautifully. Stir a couple of times during cooking and again before serving to mix the flavors.
  • Serve hot, ideally with a slice of warm, crusty bread for a delightful meal. This adds an extra layer of comfort to your dining experience.

Notes

For a little extra kick, consider adding a pinch of red pepper flakes. Feel free to swap in your favorite vegetables, like carrots or bell peppers, for added variety. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
