  • 2 tablespoons olive oil
  • 1 pound baby Yukon Gold potatoes, quartered or halved
  • Salt and pepper to taste
  • 0.5 teaspoon garlic powder
  • 12 ounces precooked smoked sausage (turkey or beef), sliced
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 tablespoons Parmesan cheese
  • Fresh parsley, for garnish

Instructions
 

  • Heat 1 tablespoon of olive oil in a large nonstick skillet over medium heat.
  • Add the potatoes to the skillet with salt, pepper, and garlic powder. Cook, stirring occasionally, until the potatoes are soft and slightly crispy on the edges, about 10-12 minutes. Transfer the potatoes to a plate.
  • Add the remaining tablespoon of olive oil to the skillet. Cook the onions and peppers with a pinch of salt until softened, about 5 minutes.
  • Push the vegetables to the side and add the sausage rounds to the skillet. Cook for 2-3 minutes on each side until golden and flavorful.
  • Return the potatoes to the skillet and toss everything together. Sprinkle with Parmesan cheese and fresh parsley.
  • Serve hot and enjoy!
