  • 1.5 lb sweet potatoes, peeled and diced
  • 1 medium onion, minced
  • 0.5 medium red bell pepper, diced
  • 0.5 medium green bell pepper, diced
  • 1.5 lb smoked sausage, sliced
  • 4 tablespoons olive oil or butter, or ghee
  • 2 teaspoons Italian seasoning
  • 0.5 teaspoon red chili pepper flakes to taste
  • 0.5 teaspoon minced garlic
  • 0.25 cup low-sodium chicken stock or beef, vegetable
  • 1 teaspoon hot sauce (e.g., Sriracha)
  • 1 to taste salt
  • 1 to taste fresh cracked pepper
  • 4 stalks scallion, chopped
  • 1 tablespoon chopped parsley for garnish

Instructions
 

  • In a large cast-iron skillet, heat 3 tablespoons of olive oil over medium heat. Add the diced sweet potatoes, season with salt and pepper, and sauté for about 10 minutes, or until they are golden and tender. Once done, transfer them to a plate and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil. Add the sliced smoked sausage and cook for 5-7 minutes, or until browned. Remove from the skillet and set aside.
  • Add the diced red and green bell peppers to the skillet. Stir-fry for about 2 minutes, or until they are crisp-tender. Set aside with the sausage.
  • In the same pan, add the minced garlic and onion. Season with red chili pepper flakes, Italian seasoning, salt, and pepper. Stir-fry until the onions are translucent. Pour in the chicken stock to deglaze the pan, then stir in the hot sauce.
  • Return the sweet potatoes, bell peppers, scallions, and sausage to the skillet. Mix everything well and cook for an additional 2-3 minutes, or until heated through.
  • Taste and adjust the seasoning if needed. Garnish with chopped parsley and enjoy your hearty meal!

Notes

Feel free to adjust the spice levels to your liking. You can add other vegetables like zucchini or carrots for extra flavor and nutrition.
