  • 1 tablespoon olive oil
  • 0.5 cup diced onion
  • 2 cloves garlic minced
  • 14 ounces smoked sausage cut in half lengthwise and then into ¼ inch pieces
  • 2 medium zucchini cut in half lengthwise and then into ¼ inch pieces
  • 1 medium yellow squash cut in half lengthwise and then into ¼ inch pieces
  • 2 cups grape or cherry tomatoes sliced in half lengthwise
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • to taste Kosher salt

Instructions
 

  • Preheat a 12-inch skillet over medium heat.
  • Add olive oil to the skillet. Once it’s hot, add the diced onion and sauté until soft, about 3-4 minutes.
  • Stir in the minced garlic and cook for 30 seconds. Then, add the smoked sausage and cook until browned, about 7 minutes.
  • Mix in the zucchini, yellow squash, tomatoes, oregano, red pepper flakes, and salt. Cook for another 7 minutes, or until the zucchini is tender but still slightly crunchy.
  • Enjoy your delicious skillet dish on its own or over a bed of steamed rice.

Notes

Feel free to adjust the seasonings to suit your taste! You can add other vegetables like bell peppers or spinach for extra flavor and nutrition. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
