  • 16 ounces Gemelli pasta
  • 16 ounces smoked sausage cut into ΒΌ-inch pieces
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon all-purpose flour
  • 0.25 cup whole milk
  • 1 cup chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 0.5 teaspoon kosher salt
  • 15 ounces corn drained
  • 1 cup Parmesan cheese freshly grated, plus more for serving
  • 1 tablespoon fresh parsley chopped for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the Gemelli pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain the rest. Set the drained pasta and reserved water aside.
  • In a large skillet over medium heat, add the olive oil. Once hot, add the smoked sausage in a single layer. Sear for 2-3 minutes on each side until browned and crisp. Transfer the sausage to a plate and set aside.
  • In the same skillet (do not drain the oil), sprinkle in the flour. Whisk continuously, scraping up any brown bits, until a paste forms and the mixture starts to brown.
  • Slowly whisk in the milk, continuing to whisk until the mixture thickens slightly, about 5 minutes.
  • Stir in the chicken broth, Cajun seasoning, garlic powder, and salt. Bring the mixture to a light simmer.
  • Add the drained corn and Parmesan cheese. Stir and let simmer for an additional 5 minutes.
  • Return the cooked pasta and sausage to the skillet, stirring to combine. If the sauce is too thick, gradually stir in a bit of the reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
  • Garnish with chopped parsley and additional Parmesan cheese before serving.

Notes

For a little extra kick, consider adding some diced bell peppers or a pinch of red pepper flakes. This dish pairs wonderfully with a side salad for a complete meal. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
