  • 5 sheets honey graham crackers
  • 10 tablespoons unsalted butter
  • 2.75 cups dark chocolate chips
  • 0.5 cup dark brown sugar packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 0.66 cup all-purpose flour
  • 0.25 cup unsweetened dutch cocoa powder
  • 1 teaspoon espresso powder optional
  • 0.25 teaspoon fine sea salt
  • 0.5 cup chopped dark chocolate
  • 0.33 cup water
  • 4.5 teaspoons gelatin powder
  • 1.125 cups granulated sugar
  • 0.33 cup agave (substitute honey or corn syrup)
  • 0.33 cup water
  • 1 teaspoon vanilla bean paste
  • 0.25 teaspoon fine sea salt

Instructions
 

  • Preheat the oven to 350°F (180°C) and line an 8x8 baking pan with parchment paper.
  • Arrange the graham cracker sheets evenly on the bottom of the pan.
  • Melt the butter and dark chocolate chips until smooth.
  • In a bowl, whisk together the sugars, eggs, egg yolk, and vanilla. Then mix in the melted butter and chocolate.
  • Fold in the flour, cocoa powder, espresso powder, and salt. Pour the brownie batter over the graham crackers.
  • Bake for 30-35 minutes until a toothpick comes out with a few moist crumbs. Let it cool completely.
  • Melt the chopped dark chocolate and spread it over the cooled brownie.
  • Prepare the marshmallow by mixing water and gelatin in a bowl attached to a stand mixer.
  • Boil sugar, agave, and water until it reaches 240-250°F, then slowly pour it into the gelatin mixture while mixing.
  • Add vanilla and salt, then mix on medium speed for 10-15 minutes until fluffy.
  • Spread the marshmallow over the brownie and let it set for at least 4 hours.
  • Dust the marshmallow with powdered sugar and cut the brownies into squares.
  • Use a kitchen torch or broiler to brown the tops of the brownies.

Notes

For easier cutting, run the knife under hot water and grease it with oil before each cut.
