Ingredients
  

Main Ingredients

  • 1 lb smoked beef sausage, cut into bite-sized pieces
  • 1 large onion, chopped
  • 5 6 russet potatoes, peeled and cubed about 3/4 inch
  • 1 /2 cup water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder optional
  • 3 4 tablespoons vegetable oil

Instructions
 

  • In a large skillet, drizzle a little vegetable oil and heat over medium-high heat. Add the sausage pieces and sauté until they are well browned, about 5-7 minutes.
  • While the sausage is cooking, peel the potatoes and cut them into cubes.
  • Once the sausage is browned, add the cubed potatoes, chopped onion, 3-4 tablespoons of vegetable oil, water, salt, pepper, and garlic powder to the skillet. Stir everything together until well combined.
  • Bring the mixture to a boil, then reduce the heat to medium-low. Cover the skillet and let it cook for 10 minutes, flipping once or twice to prevent sticking.

Notes

For added flavor, consider adding your favorite herbs or spices. You can also toss in some bell peppers or carrots for extra veggies!
