  • 1 can pink salmon 14.75-oz can, with or without bones
  • 0.25 cup chopped onion
  • 0.25 cup yellow cornmeal
  • 1 large egg egg
  • 0.25 cup all-purpose flour or almond flour
  • 3 tbsp mayonnaise
  • 0.25 tsp chili powder
  • 0.5 tbsp olive oil or vegetable oil
  • to taste salt and pepper

Instructions
 

  • Open the can of salmon, drain it completely, and place it in a mixing bowl. Use a fork to break up the salmon into smaller pieces.
  • Add the chopped onion, cornmeal, flour, mayonnaise, chili powder, egg, salt, and pepper to the bowl. Mix well until all ingredients are fully combined. Tip: Make sure the mixture is not too wet; if it is, add a bit more flour to hold it together.
  • Shape the mixture into patties, forming them to your desired size, like small burgers. Tip: For even cooking, try to keep the patties uniform in size.
  • Heat the olive oil in a skillet over medium heat. A hot skillet ensures a nice sear on the patties.
  • Cook the patties in the skillet until they are golden brown on each side, about 5 minutes per side. Flip them once during cooking to brown both sides evenly. Tip: If the patties are browning too quickly, lower the heat to ensure they cook through without burning.
