  • 3 large sweet potatoes, peeled and cubed
  • 0.25 cup olive oil
  • 0.25 cup maple syrup
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 0.5 cup chopped pecans
  • 0.25 cup brown sugar

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the sweet potato cubes with olive oil, maple syrup, cinnamon, and salt until evenly coated. Tip: Make sure each cube is well coated for the best flavor.
  • Spread the sweet potatoes in a single layer on a baking dish.
  • In a small bowl, mix the chopped pecans and brown sugar.
  • Sprinkle the pecan mixture over the sweet potatoes.
  • Cover the baking dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the topping is golden. Tip: Check for tenderness by poking a sweet potato with a fork; it should easily slide in.
  • Let it cool slightly before serving.

Notes

For a savory twist, add a sprinkle of rosemary or thyme before baking.
