  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 can black beans, drained and rinsed 15 oz
  • 1 cup corn fresh, frozen, or canned
  • 1 tsp chili powder
  • 1 tsp cumin
  • 8 small tortillas
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup lettuce, shredded
  • 1 2 diced tomatoes
  • 1 4 sour cream optional

Instructions
 

  • In a medium saucepan, combine the shredded chicken and BBQ sauce. Heat over medium heat for about 5-7 minutes, stirring occasionally, until warmed through.
  • In a separate bowl, mix the black beans, corn, chili powder, and cumin. Stir until well combined.
  • Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
  • To assemble the tacos, place a generous spoonful of the BBQ chicken mixture on each tortilla, followed by the black bean mixture.
  • Top with shredded cheese, lettuce, diced tomatoes, and a dollop of sour cream if desired.
  • Serve immediately and enjoy your delicious tacos!

Notes

Feel free to add avocado or jalapeños for an extra kick! You can use store-bought rotisserie chicken for a quicker option.
