In a large heatproof bowl, combine the chili powder (or flakes), minced garlic, and sugar.
In a small saucepan, heat the neutral oil over medium-high heat until it is very hot.
Carefully pour the hot oil into the bowl with the chili garlic mixture, and mix well.
Cook the noodles according to the package instructions, about 3 minutes for dried noodles.
Once cooked, add the noodles to the bowl with the sauce and toss to combine.
Top with coriander, spring onions, and crispy chili oil, if using. Mix thoroughly before serving.
Notes
For a milder flavor, reduce the amount of chili powder or flakes. Feel free to add your favorite vegetables or proteins to the noodles for a heartier meal.
