  • 16 ounces dry pasta
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 3 tablespoons flour
  • 1 cup chicken broth
  • 2 cups half and half
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon red pepper flakes
  • 0.5 cup grated Parmesan cheese
  • 2 cups grated mozzarella cheese, divided
  • 1 tablespoon chopped fresh parsley
  • 12 ounces fully cooked smoked sausage, sliced

Instructions
 

  • Cook the dry pasta according to package directions until just al dente. Drain and set aside. (Tip: Make sure not to overcook the pasta as it will continue to cook in the oven.)
  • In a large skillet over medium heat, melt the butter. Add the minced garlic and cook for 1-2 minutes until fragrant. (Tip: Watch the garlic closely to prevent burning.)
  • Stir in the flour and cook for another minute, stirring constantly.
  • Gradually whisk in the chicken broth until smooth, then add the half and half.
  • Season with salt, black pepper, cayenne pepper, and red pepper flakes. Simmer the sauce for about 5 minutes, or until it thickens. (Tip: Stir occasionally to keep the sauce from sticking.)
  • Stir in the grated Parmesan cheese and 1 cup of mozzarella cheese until melted and smooth.
  • Add the sliced smoked sausage and cooked pasta to the sauce, along with the chopped parsley. Mix well and adjust seasoning if needed.
  • Preheat your broiler. Pour the pasta mixture into a lightly greased 9x13 inch baking dish. Top with the remaining 1 cup of mozzarella cheese.
  • Broil for 2-3 minutes, or until the cheese is bubbly and golden. (Tip: Keep an eye on it to prevent burning!)

Notes

For a little extra flavor, consider adding some sautéed vegetables like spinach or bell peppers. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
