Ingredients
  

  • 1/4 cup smooth peanut butter
  • 1/4 cup low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons packed brown sugar or honey
  • 1/2 teaspoon chili paste like sambal oelek
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 2 garlic cloves minced
  • 1/4 teaspoon ground ginger
  • 3 tablespoons water
  • 8 oz. noodles (fettuccine, lo mein, or other)

Instructions
 

  • Cook the noodles according to the package instructions. Drain and keep warm.
  • In a small bowl or measuring cup, whisk together the peanut butter, soy sauce, sesame oil, brown sugar or honey, chili paste, rice vinegar or apple cider vinegar, minced garlic, ground ginger, and water until the sauce is smooth and well mixed. Adjust the chili paste to taste.
  • Heat the sauce in a pan or microwave, then pour it over the cooked noodles. Toss the noodles to coat them evenly.
  • Garnish the noodles with chopped green onions and toasted sesame seeds before serving.

Notes

Notes:
- For added crunch, sprinkle some crushed peanuts on top before serving.
