Ingredients
  

  • 1 package udon noodles
  • 1/2 shallot
  • 2 cloves garlic
  • 1 1/2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 1 tbsp gochugaru Korean chili flakes
  • 1 tbsp chili crisp
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 tbsp kecap manis sweet soy sauce optional
  • 2 1/2 tbsp oil
  • Garnish: green onion black garlic, crispy garlic

Instructions
 

  • Finely dice the shallot and mince the garlic into a bowl.
  • Add soy sauce, dark soy sauce, gochugaru, chili crisp, rice vinegar, sesame oil, sugar, and sweet soy sauce. Mix well.
  • Heat up the oil to 400°F, then pour it over all the sauces.
  • Cook the udon noodles according to the package instructions.
  • Mix the cooked udon noodles with the sauce and top with green onion, black garlic, and crispy garlic.

Notes

Notes:
- For a milder flavor, reduce the amount of chili flakes and chili crisp.
- Customize the garnishes with your favorite toppings like sesame seeds or shredded nori.
