  • 4 pieces chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 4 ounces cream cheese softened
  • 0.25 cup Parmesan cheese grated
  • 2 tablespoons mayonnaise
  • 1.5 cups fresh spinach chopped
  • 1 teaspoon minced garlic
  • 0.5 teaspoon red pepper flakes

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts on a cutting board and drizzle them with the olive or avocado oil.
  • In a small bowl, mix together the paprika, ½ teaspoon of salt, garlic powder, and onion powder. Sprinkle this mixture evenly on both sides of the chicken breasts.
  • Carefully cut a pocket into the side of each chicken breast.
  • In another bowl, combine the softened cream cheese, grated Parmesan, mayonnaise, chopped spinach, minced garlic, red pepper flakes, and the remaining ½ teaspoon of salt. Mix until everything is well incorporated.
  • Stuff each chicken breast with the spinach mixture evenly.
  • Place the stuffed chicken breasts in a 9x13 baking dish.
  • Bake uncovered for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Notes

Serve with a side of roasted vegetables or a fresh salad for a complete meal.
