  • 1 cup yellow onion, chopped about 1 cup
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 1.5 cups uncooked white rice
  • 4 cups chicken broth
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon freshly cracked pepper
  • 8 ounces fresh baby spinach, roughly chopped about 4 cups
  • 1.5 tablespoons fresh lemon juice about ½ small lemon
  • 2 tablespoons freshly shredded Parmesan cheese optional

Instructions
 

  • In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent. This step is crucial as it builds the flavor base for your dish.
  • Stir in the minced garlic and uncooked rice. Cook while stirring constantly for about 2 minutes, until the rice is lightly browned. Remember, this enhances the nutty flavor of the rice.
  • Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat, cover, and let it simmer for 15 minutes. Stir occasionally to prevent the rice from sticking to the bottom.
  • After 15 minutes, add the kosher salt, freshly cracked pepper, and chopped spinach. Cover the skillet for 2-3 minutes to allow the spinach to wilt. This helps retain the nutrients and vibrant color of the spinach.
  • Remove the skillet from heat and stir in the fresh lemon juice. If you like, sprinkle the dish with Parmesan cheese. Cover for an additional 2 minutes to let the cheese melt, then serve warm.

Notes

For added flavor, consider using vegetable broth instead of chicken broth. You can mix in other vegetables like peas or bell peppers for a colorful twist. This dish pairs well with grilled chicken or fish for a complete meal.
