  • 1 15 ounce can artichoke hearts, drained and chopped
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 cup chopped fresh spinach packed
  • 2 pounds boneless skinless chicken breasts (3-4 breasts), lightly pounded to even thickness
  • 1 cup freshly grated Mozzarella cheese

Instructions
 

  • Preheat your oven to 375°F. Grease a 9x13-inch baking dish with nonstick cooking spray and set it aside.
  • In a medium mixing bowl, mix together the chopped artichokes, spinach, Parmesan cheese, mayonnaise, and garlic powder.
  • Place the chicken breasts side by side in the prepared baking dish. Spread the artichoke mixture evenly on top of each chicken breast. Sprinkle the Mozzarella cheese over the top.
  • Cover the baking dish with foil and bake for 20-30 minutes. Check the internal temperature of the chicken; it should reach at least 155°F.
  • Uncover the dish and switch on the broiler. Cook for an additional 5-10 minutes, or until the cheese is browned and the chicken is fully cooked.
  • Let it rest for 5 minutes before serving.
  • If the chicken is below 160°F, return it to the oven for a few more minutes without using the broiler.

Notes

For added flavor, consider adding a sprinkle of Italian seasoning or red pepper flakes to the artichoke mixture before spreading it on the chicken.
