  • 1.5 large eggs

  • 1 pound shredded Cheddar cheese
  • 2 packages frozen chopped spinach, thawed and drained
  • 1 tablespoon minced onion

Instructions
 

  • Preheat your oven to 350°F (175°C). This step is crucial for ensuring even cooking.
  • Place the butter in a 9x13-inch baking dish and melt it in the oven. This should take about 3 minutes. Keep an eye on it to prevent burning!
  • In a large mixing bowl, beat the eggs until well combined. Add the flour, milk, and baking powder, and mix until everything is well incorporated. A whisk works great for this!
  • Stir in the shredded cheese, thawed spinach, and minced onion. Make sure to mix thoroughly so that all ingredients are evenly distributed.
  • Spoon the mixture into the buttered baking dish, spreading it evenly across the surface.
  • Bake in the preheated oven for 35 minutes. The top should be golden brown when it's done. A toothpick inserted in the center should come out clean.
  • Allow the dish to cool for 45 minutes before cutting it into bite-sized squares. This cooling time helps the squares firm up for easier serving.
