  • 32 ounces store-bought marinara sauce
  • 1 tablespoon olive oil
  • 5 ounces baby spinach
  • 3 cloves garlic, minced
  • 1.5 pounds lean ground turkey
  • 1 large egg
  • 0.5 cup breadcrumbs regular or gluten-free
  • 0.5 cup crumbled feta cheese
  • 2 teaspoons dried oregano or your favorite herbs
  • 0.75 teaspoon salt
  • 0.25 teaspoon black pepper
  • Freshly chopped parsley for serving optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Pour the marinara sauce into a large skillet or baking dish and set aside.
  • In a skillet, heat the olive oil over medium heat. Add the baby spinach and cook until wilted, about 2-3 minutes. Stir in the minced garlic and cook for an additional 30 seconds. Remove from heat and coarsely chop the spinach on a cutting board.
  • In a medium bowl, combine the ground turkey, chopped spinach, egg, breadcrumbs, crumbled feta cheese, oregano, salt, and black pepper. Mix gently with your hands until just combined—be careful not to overmix, as this can make the meat tough.
  • Form about 2 tablespoons of the turkey mixture into a ball and place it in the skillet with the marinara sauce. Repeat with the remaining mixture until all meatballs are formed.
  • Bake the meatballs in the preheated oven for 20-25 minutes. Check for doneness after 15 minutes; they should reach an internal temperature of 165°F (74°C).
  • Once cooked, remove from the oven and garnish with freshly chopped parsley if desired. Serve and enjoy!

Notes

Feel free to substitute the feta cheese with another cheese of your choice if you prefer. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
