  • 3.25 cups all-purpose flour
  • 1 tablespoon baking powder aluminum-free
  • 0.5 teaspoon baking soda
  • 2 tablespoons granulated sugar
  • 1.5 teaspoon fine sea salt
  • 1 cup unsalted butter cold
  • 1 cup whole buttermilk cold
  • 0.25 cup heavy whipping cream cold
  • 1 cup fresh strawberries finely chopped, hulled

Icing Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons milk of choice
  • 0.5 teaspoon vanilla extract optional

Instructions
 

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix 3 cups of flour, baking powder, baking soda, sugar, and salt.
  • Cut cold butter into small cubes and mix until the mixture resembles coarse crumbs.
  • Add buttermilk, heavy cream, and strawberries; mix gently until dough comes together.
  • Turn the dough onto a floured surface and shape it gently into a cohesive mass.
  • Roll into a rectangle about 6 by 13 inches and 1 inch thick; cut into rounds.
  • Freeze cut biscuits for at least 15 minutes on the baking sheet.
  • Brush with buttermilk and bake for 20 minutes until golden brown.
  • Make icing by mixing powdered sugar, milk, and vanilla extract until smooth.
  • Drizzle icing over warm biscuits and serve immediately.

Notes

For a fun twist, try adding a pinch of lemon zest to the icing for a citrusy kick. These biscuits are best enjoyed fresh but can be stored in an airtight container for a couple of days.
