For the Bread:

  • 3/4 cup granulated sugar
  • 1/2 cup 2% milk
  • 1/2 cup canola oil or coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract or almond extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups diced strawberries
  • 2 tablespoons all-purpose flour

For the Glaze:

  • 2 cups powdered sugar
  • 2 tablespoons melted butter
  • 1/3 cup finely diced strawberries
  • 1/2 teaspoon vanilla extract or almond extract
  • 1-2 tablespoons heavy cream or milk optional

Instructions
 

  • Preheat your oven to 350ºF (180ºC).
  • In a medium bowl, mix together 1 cup of sugar, 1/2 cup of milk, 1/3 cup of oil, the egg, and 1 teaspoon of vanilla extract until well combined.
  • In another bowl, combine the 2 cups of flour, baking powder, and salt. Add this dry mixture to the wet ingredients and stir gently until just combined. Avoid overmixing to keep the bread tender.
  • In a small bowl, toss the diced strawberries with 2 tablespoons of flour. This helps prevent them from sinking to the bottom of the bread. Gently fold the floured strawberries into the batter.
  • Pour the batter into a greased 9"x5" bread pan. Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then carefully transfer it to a wire rack to cool completely.
  • In a small bowl, whisk together the powdered sugar, melted butter, finely diced strawberries, and 1 teaspoon of vanilla extract until smooth. If the glaze is too thick, add a splash of heavy cream or milk to achieve your desired consistency.
  • Once the bread is completely cool, spread the glaze generously over the top. Feel free to sprinkle some chopped nuts or additional strawberries on top for extra flair!
  • Slice and serve. Store any leftovers in the refrigerator for up to 3 days.
