Instructions
In a large bowl, beat cream cheese, sugar, egg, and vanilla extract until smooth.
Add strawberry jam and fresh strawberries, beat until combined.
Stir in pancake mix and flour until fully incorporated; the dough will be sticky and pink.
Turn the dough onto a floured surface, press out to 1/2 inch (1.25 cm) thickness, and cut into circles.
Heat oil in a large pot to 350ºF (180ºC).
Fry donuts until browned on both sides, then cool on a rack.
For the frosting, beat cream cheese until smooth, add powdered sugar, vanilla extract, and milk.
Dunk the tops of the donuts in the frosting and garnish with fresh strawberry slices.
