Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or nonstick spray.
In a bowl, mix granulated sugar, brown sugar, beaten eggs, and vegetable oil until well combined.
Gradually add the self-rising flour and salt, mixing until just incorporated.
Stir in the vanilla extract, then gently fold in the chopped pecans.
Pour the batter into the greased baking dish.
Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out mostly clean.
Let the Pecan Bread cool in the dish for at least 15 minutes before slicing and serving.
Notes
For added flavor, consider toasting the pecans before chopping and adding them to the batter.
