Sweet and Tangy Cauliflower Bites

Ingredients
  

  • 1 small head cauliflower chopped (6 1/2 cups florets)
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup pure maple syrup honey, or agave
  • 1/4 cup rice vinegar
  • 1 tbsp minced garlic
  • 1 ½ tsp toasted sesame oil
  • ½ tsp powdered ginger
  • 1 1/2 tbsp cornstarch or arrowroot
  • 1/4 cup water
  • Sesame seeds and scallions for garnish

Instructions
 

  • Preheat your oven to 450°F. Grease a baking pan or line it with parchment paper.
  • Cut the cauliflower into florets, then slice each floret so one side is flat. Arrange them in a single layer on the prepared pan.
  • Bake for 10 minutes on the center rack.
  • In a saucepan, whisk together soy sauce, sweetener, rice vinegar, garlic, sesame oil, and ginger. Bring the mixture to a boil.
  • In a separate bowl, stir together cornstarch and water until the cornstarch dissolves completely. Slowly whisk this mixture into the saucepan once it boils.
  • Reduce the heat to medium and cook for 2 minutes, stirring more frequently once it boils. Cook until the sauce thickens. The sauce can be made ahead of time and will thicken more in the fridge.
  • Flip the cauliflower florets and bake for an additional 10 minutes. For a crispier texture, move the pan to the top rack and broil for 1-2 minutes.
  • Pour the sauce over the cauliflower florets. Sprinkle sesame seeds and optional scallions on top before serving.

Notes

Notes:
For a quicker meal, prepare the sauce in advance and store it in the fridge. The flavors will intensify over time.
