1small head cauliflowerchopped (6 1/2 cups florets)
1/3cuplow-sodium soy sauce
1/4cuppure maple syruphoney, or agave
1/4cuprice vinegar
1tbspminced garlic
1 ½tsptoasted sesame oil
½tsppowdered ginger
1 1/2tbspcornstarch or arrowroot
1/4cupwater
Sesame seeds and scallionsfor garnish
Instructions
Preheat your oven to 450°F. Grease a baking pan or line it with parchment paper.
Cut the cauliflower into florets, then slice each floret so one side is flat. Arrange them in a single layer on the prepared pan.
Bake for 10 minutes on the center rack.
In a saucepan, whisk together soy sauce, sweetener, rice vinegar, garlic, sesame oil, and ginger. Bring the mixture to a boil.
In a separate bowl, stir together cornstarch and water until the cornstarch dissolves completely. Slowly whisk this mixture into the saucepan once it boils.
Reduce the heat to medium and cook for 2 minutes, stirring more frequently once it boils. Cook until the sauce thickens. The sauce can be made ahead of time and will thicken more in the fridge.
Flip the cauliflower florets and bake for an additional 10 minutes. For a crispier texture, move the pan to the top rack and broil for 1-2 minutes.
Pour the sauce over the cauliflower florets. Sprinkle sesame seeds and optional scallions on top before serving.
