  • 1.5 pounds boneless skinless chicken thighs
  • 0.75 cup sweet chili sauce
  • 1.5 cups chicken broth
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.25 cup soy sauce
  • 0.25 cup chicken broth (for thickening)
  • 2 tablespoons cornstarch (for thickening)
  • 1 handful snipped cilantro for garnish

Instructions
 

  • In the bottom of a large slow cooker, mix together the sweet chili sauce, chicken broth, kosher salt, black pepper, and soy sauce.
  • Place the chicken thighs on top of the sauce, spooning some of the mixture over the chicken to ensure it’s well coated.
  • Cover and cook on low for 6 hours. Remember, don’t open the lid during this time; you want to keep all that moisture in!
  • If you prefer a thicker sauce, remove the chicken after cooking, cut it into bite-sized pieces, and set it aside.
  • In a small glass, whisk together ¼ cup of chicken broth and the cornstarch to create a thickening mixture. This will help give your sauce a lovely, rich texture.
  • Pour the thickening mixture into the sauce in the slow cooker and stir well. Add the chicken back in, ensuring it’s coated in the now thickened sauce.
  • Cover and cook for an additional 20-30 minutes. This is a great time to prepare some cilantro lime rice to serve alongside.
  • Serve the dish with snipped cilantro on top for a fresh finish and enjoy the wonderful flavors!

Notes

For a twist, try adding some sliced bell peppers or pineapple chunks for extra flavor and color.
