Wash and slice the sweet potatoes into discs of medium thickness.
Place the sweet potato slices on a baking sheet lined with parchment paper, leaving space between each. Lightly mist them with olive oil spray and sprinkle with salt.
Bake for 15 minutes, then flip the discs and bake for an additional 15 minutes.
Top each sweet potato disc with cranberry sauce and a small piece of dairy-free brie.
Bake for another 10 minutes at 375°F (190°C).
Press a pecan into the brie on each disc and bake for a final 5 minutes.
