  • 2 large Sweet Potatoes
  • 1 cup Cranberry Sauce
  • 0.25 cup Pecans
  • 0.5 cup Dairy-Free Brie e.g., "Nuts 4 Cheese"

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Wash and slice the sweet potatoes into discs of medium thickness.
  • Place the sweet potato slices on a baking sheet lined with parchment paper, leaving space between each. Lightly mist them with olive oil spray and sprinkle with salt.
  • Bake for 15 minutes, then flip the discs and bake for an additional 15 minutes.
  • Top each sweet potato disc with cranberry sauce and a small piece of dairy-free brie.
  • Bake for another 10 minutes at 375°F (190°C).
  • Press a pecan into the brie on each disc and bake for a final 5 minutes.
  • Serve the sweet potato cranberry brie bites hot and enjoy!

Notes

For a variation, try adding a sprinkle of fresh herbs like thyme or rosemary for extra flavor.
