  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.75 cup mashed cooked sweet potato
  • 1.5 teaspoons vanilla extract
  • 2 tablespoons maple syrup
  • 0.5 tablespoon coconut oil
  • 0.33 cup unsweetened almond milk

Instructions
 

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • In a large mixing bowl, combine almond flour, coconut flour, baking soda, salt, cinnamon, and nutmeg. This will be your dry mixture.
  • In a separate medium bowl, whisk together the mashed sweet potato, eggs, vanilla, maple syrup, coconut oil, and almond milk until smooth. This is your wet mixture.
  • Pour the wet ingredients into the dry ingredients and mix until well blended. The batter will be thick, which is perfect for waffles.
  • Pour the thick batter onto the preheated waffle iron, spreading it out with a spatula if needed to ensure even cooking.
  • Follow the waffle iron instructions to cook the waffles, usually about 5-7 minutes or until they are golden brown and crisp.
  • Serve the warm waffles with your favorite toppings, such as fresh fruit, a drizzle of maple syrup, or a dollop of whipped cream for an extra special treat.
