  • 3 large sweet potatoes
  • 3 tbsp olive oil
  • 0.5 tsp cinnamon
  • 0.5 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp ground coriander
  • 0.5 tsp red pepper flakes
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tbsp honey regular or hot
  • 0.33 cup crumbled feta cheese
  • 1 bunch fresh chives or parsley chopped
  • 1 tbsp additional honey for serving

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Wash the sweet potatoes thoroughly and dry them. Slice the potatoes into 1/3-inch thick round slices.
  • Drizzle the olive oil on a large rimmed baking sheet. Add the sweet potato slices and toss them to coat evenly in the oil.
  • Sprinkle the cinnamon, smoked paprika, cumin, coriander, red pepper flakes, salt, and drizzle the honey over the sweet potatoes. Toss the potatoes again to coat them evenly in the seasonings.
  • Bake in the oven for 20 minutes. Flip the sweet potato rounds and return them to the oven for another 20-25 minutes, or until they are golden and crispy around the edges.
  • Carefully transfer the sweet potatoes to a serving platter, sprinkle a little more salt, drizzle extra honey, and crumble feta cheese over them. Top with fresh chives or parsley.
  • Serve the sweet potato rounds with feta and honey while still warm.
