  • 3 large sweet potatoes
  • 1 tbsp olive oil
  • 1 large onion diced
  • 1 large bell pepper diced
  • 1 lb ground beef
  • 4 cloves garlic minced
  • 0.5 cup ketchup
  • 8 oz tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp light brown sugar
  • 2 tsp dried mustard
  • 0.25 tsp salt
  • 0.25 tsp pepper
  • 1 tbsp butter for serving
  • 1 bunch green onions for garnish

Instructions
 

  • Preheat the oven to 425°F (220°C). This high temperature will ensure your sweet potatoes cook thoroughly and develop a nice sweetness.
  • Use a fork to poke holes in the sweet potatoes to allow steam to escape. This step is essential to prevent them from bursting in the oven.
  • Drizzle the sweet potatoes with olive oil and bake for 40-50 minutes until they are fork-tender. You can check doneness by inserting a fork into the thickest part of the potato.
  • In a skillet, heat 1 tbsp of olive oil over medium-high heat. This will help sauté the vegetables nicely.
  • Add diced onions and bell peppers to the skillet, and sauté for 3-4 minutes until softened and slightly colored. Stir occasionally to ensure even cooking.
  • Add the ground beef to the skillet and cook for 3-4 minutes until no longer pink. Break up the meat with a spatula for even cooking.
  • Stir in minced garlic and cook for an additional 1-2 minutes until fragrant. Garlic adds a wonderful depth of flavor.
  • Add ketchup, tomato sauce, Worcestershire sauce, apple cider vinegar, light brown sugar, dried mustard, salt, and pepper to the skillet. Mix well to combine all ingredients.
  • Bring the mixture to a simmer and cook for 2-3 minutes until heated through and slightly thickened. This will help the flavors meld together beautifully.
  • Cut the cooked sweet potatoes in half, add a tablespoon of butter to each half, and sprinkle with salt and pepper. The butter will melt into the sweet potato, enhancing its flavor.
  • Stuff the sweet potatoes with the sloppy Joe mixture. Be generous; it’s all about the filling!
  • Garnish with green onions for a fresh finish and serve immediately. Enjoy your delicious creation!

Notes

For a vegetarian option, substitute the ground beef with plant-based crumbles for a meatless alternative. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
