Ingredients

  • 1 pound lean ground beef
  • 1 oz taco seasoning
  • 0.25 cup water or beef broth
  • 1 cup refried beans optional
  • 2 cup cooked Mexican rice or instant Mexican rice
  • 4 count burrito-sized flour tortillas
  • 2 cup Fritos or Doritos
  • 1 cup cheese dip warmed (like Tostitos)
  • 1 cup shredded Mexican cheese blend
  • 0.5 cup sour cream
  • 1 count salsa if desired

Instructions
 

  • In a sauté pan, cook the ground beef until no longer pink, about 5-7 minutes.
  • Add taco seasoning and water, stir, and cook for another minute.
  • Mix in refried beans, if using.
  • Cook the Mexican rice or warm leftover rice.
  • Heat the tortillas in the microwave for 30 seconds.
  • Assemble the burritos by adding meat mixture, rice, Fritos, cheese dip, shredded cheese, and sour cream.
  • Fold sides in and roll into a burrito.
  • Toast in a pan for 2-3 minutes on each side until golden brown.
  • Serve immediately with salsa if desired.

Notes

For a crispy texture, toast the burritos in a pan until golden brown on each side.
