Ingredients
  

Main Ingredients

  • 6 ten-inch flour tortillas
  • 2 cups shredded Colby-Jack cheese
  • 1 cup shredded rotisserie chicken

Quesadilla Sauce:

  • 1/4 cup mayonnaise
  • 2 tsp minced pickled jalapeños
  • 2 tsp pickled jalapeño juice
  • 3/4 tsp sugar
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1/8 tsp garlic powder

Instructions
 

  • Heat a large skillet over low heat.
  • Prepare the quesadilla sauce by mixing all the ingredients in a small bowl.
  • Spread the sauce on one side of each tortilla.
  • Lightly spray the skillet with cooking spray to prevent sticking.
  • Place one sauced tortilla in the skillet, sauce side up.
  • Add 2/3 cup of cheese evenly across the tortilla, followed by 1/3 cup of shredded chicken. Then, add a little more cheese on top for extra gooeyness.
  • Cover with another tortilla to make a quesadilla. Press down gently to help it stick together.
  • Cook for about 2 minutes until the bottom is golden brown. Cover while cooking to help the cheese melt.
  • Carefully flip the quesadilla, cover again, and cook for another 2 minutes until golden brown on the other side.
  • Repeat the process with the remaining tortillas and fillings until all are cooked.
  • Once cooked, slice each quesadilla into triangles using a pizza cutter. Serve warm and enjoy the delicious flavors!
