Main Ingredients

  • 1 pound ground beef Lean ground beef is ideal.
  • 2 tablespoons taco seasoning
  • 6 taco-sized tortillas flour tortillas
  • 2 cups Mexican shredded cheese blend
  • 3.75 cups Pico de Gallo

Instructions
 

  • Prepare the Pico de Gallo by mixing all the ingredients in a bowl. Chill in the fridge until ready to use.
  • In a large skillet, brown the ground beef, breaking it into small pieces. Add the taco seasoning and water according to the package instructions.
  • Warm the flour tortillas in a towel for about 20 seconds until they are pliable and easy to handle.
  • Fill each tortilla with cheese, meat, and a spoonful of Pico de Gallo. Fold in the sides and roll up like a burrito.
  • Wrap each Meximelt in a damp paper towel and microwave for 20 seconds.
  • Serve immediately and enjoy your delicious Meximelts!

Notes

For added flavor, consider adding sliced avocado or a dollop of sour cream to your Meximelts.
