Ingredients
  

Main Ingredients

  • 2 tablespoons Olive Oil
  • 12 oz Broccoli Florets
  • 1 pound Ground Beef
  • 1 inch piece Ginger, minced (optional)
  • 2 cloves Garlic, minced (optional)
  • 1 cup Teriyaki Sauce

Sauce Ingredients

  • 0.25 cup Light Mayo
  • 1.5 tablespoons Sriracha or Chili Garlic Sauce
  • 1 tablespoon Honey
  • 1 tablespoon Rice Vinegar
  • 0.5 teaspoon Garlic Powder

For Serving

  • 1 cup Rice or Cauliflower Rice
  • Toasted Sesame Seeds
  • Scallions, thinly sliced

Instructions
 

  • In a small bowl, mix the sauce ingredients (light mayo, sriracha, honey, rice vinegar, garlic powder) and set aside.
  • Heat a skillet over medium-high heat with 1 tablespoon of olive oil. Add the broccoli and cook for 2-3 minutes until slightly charred on one side. Flip and cook for another 2-3 minutes. Transfer the broccoli to a bowl.
  • In the same skillet, add 1/2 tablespoon of oil and brown the ground beef on one side before breaking it apart and fully cooking.
  • Create a well in the center of the beef, add the remaining 1/2 tablespoon of oil, ginger, and garlic. Cook for 30-60 seconds until fragrant, then mix with the beef.
  • Pour in the teriyaki sauce, stirring everything together. Cook for 1-2 minutes until the sauce thickens and coats the beef. Add the broccoli back to the skillet, stir, and turn off the heat.
  • Serve the stir-fry over rice, drizzle with the sauce, and garnish with sesame seeds and scallions.

Notes

For a lighter option, serve the stir-fry over cauliflower rice instead of traditional rice.
