  • 0.5 cup Low-Sodium Soy Sauce
  • 0.25 cup Water
  • 2 tablespoons Red Wine Vinegar
  • 2 tablespoons Brown Sugar (or less, to taste)
  • 2 tablespoons Granulated Sugar (or less, to taste)
  • 2 teaspoons Minced Garlic
  • 1 teaspoon Ground Ginger
  • 1 tablespoon Cornstarch
  • 2 tablespoons Warm Water
  • 1 tablespoon Vegetable Oil
  • 0.5 cup Diced Onion
  • 2 tablespoons Minced Garlic
  • 1 pound Ground Turkey
  • 1 cup Broccoli, finely chopped
  • 2 large Carrots, peeled and grated
  • 2 green onions diced (for garnish)
  • 4 cups Cooked White or Brown Rice

Instructions
 

  • In a small bowl, whisk together the cornstarch and warm water until the cornstarch is fully dissolved. Set aside.
  • In a small saucepan over medium heat, combine the soy sauce, water, red wine vinegar, brown sugar, granulated sugar, minced garlic, and ground ginger. Whisk gently until the sugars are completely dissolved.
  • Slowly add the cornstarch mixture to the saucepan, stirring continuously. Simmer the sauce until it thickens, then remove from heat and set aside.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add the diced onion and cook, stirring frequently, until softened. If the onions start to scorch, reduce the heat.
  • Stir in the minced garlic, then add the ground turkey. Break it apart with a spatula and cook, stirring occasionally, until the turkey is about halfway cooked (about 4-5 minutes).
  • Add the grated carrots and chopped broccoli to the skillet. Continue cooking until the turkey is no longer pink and the vegetables are tender (about 5-6 minutes).
  • Pour the teriyaki sauce over the turkey and vegetables, stirring to combine. Let it simmer for about 5 minutes.
  • Divide the cooked rice into bowls and top with the teriyaki turkey mixture. Garnish with diced green onions and enjoy immediately!

Notes

For a spicier kick, consider adding a dash of red pepper flakes to the turkey mixture. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
