  • 1 cup ranch dressing
  • 2 tablespoons taco seasoning (hot or mild)
  • 3 cups cooked chicken cooled and diced
  • 4 cups romaine lettuce chopped (about 1 head)
  • 2 whole Roma tomatoes diced
  • 1 whole cucumber seeded and diced
  • 1 cup corn kernels (fresh or frozen)
  • 5 whole green onions sliced
  • 1 can black beans (15-ounce), drained and rinsed
  • 4 ounces sharp cheddar or pepper jack cheese cut into 1/4-inch cubes
  • 1 4th cup cilantro chopped
  • 1 half lime juice
  • 1 cup tortilla chips crushed

Instructions
 

  • Mix ranch dressing and taco seasoning in a small bowl, then refrigerate until needed.
  • In a large bowl, combine chicken, romaine lettuce, tomatoes, cucumber, corn, green onions, black beans, cheese, cilantro, lime juice, and tortilla chips.
  • Gradually add the dressing, tossing the salad until lightly coated. Season with salt and pepper to taste.
  • Serve immediately, garnishing with jalapeño, pumpkin seeds, avocado, or jicama if desired.

Notes

For a spicier kick, use hot taco seasoning. Customize with your favorite toppings like avocado or jicama.
