  • 2 lb ground beef
  • 2 packages kielbasa sausage, sliced
  • 2 cloves garlic, minced
  • 1 cup onion, chopped
  • 2 cans peeled and diced tomatoes drained
  • 4 medium baking potatoes, peeled and diced
  • 2 cans pinto beans with liquid
  • 1 can whole kernel corn drained
  • 2 cans diced tomatoes with green chile pepper with liquid
  • 1 package frozen mixed vegetables
  • 4 cups water
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 to taste salt and pepper

Instructions
 

  • In a large Dutch oven over medium heat, sauté the onion until translucent.
  • Add the ground beef and cook until no longer pink.
  • Stir in the sliced sausage.
  • Add the drained tomatoes, pinto beans with liquid, corn, potatoes, diced tomatoes with chiles, and mixed vegetables. Mix well.
  • Season with ground cumin, chili powder, salt, and pepper. Stir to combine.
  • Pour in the water and bring the stew to a boil. Reduce heat, cover, and simmer for one hour, stirring occasionally.

Notes

This stew can be served with a dollop of sour cream or shredded cheese on top. Feel free to adjust the spices to suit your taste preferences.
