Ingredients

  • 1 lb flank steak or sirloin
  • 2 tbsp vegetable oil
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 - Thai bird's eye chilies, chopped (adjust to taste)
  • 1 clove garlic, minced
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp roasted rice powder (optional)
  • Salt and pepper, to taste

Instructions
 

  • In a bowl, mix vegetable oil, fish sauce, soy sauce, lime juice, brown sugar, chopped chilies, minced garlic, salt, and pepper to make the marinade.
  • Place the flank steak in a resealable bag or dish, pour the marinade over it, ensuring it's well coated. Refrigerate for at least 1 hour, preferably overnight.
  • For the dipping sauce, combine fish sauce, lime juice, brown sugar, chopped chilies, shallots, and cilantro in a bowl. Mix well and set aside.
  • Preheat a grill or grill pan over medium-high heat.
  • Remove the beef from the marinade, letting excess drip off.
  • Grill the beef for 4-6 minutes per side for medium-rare, adjusting for preferred doneness. Avoid excessive flipping for a good sear.
  • Once grilled, let the beef rest for 5 minutes to retain juices.
  • Slice the beef thinly against the grain for tenderness.
  • Serve the sliced beef on a platter, garnished with cilantro and roasted rice powder if desired. Offer the dipping sauce on the side for added flavor.

Notes

For a milder taste, reduce the amount of Thai bird's eye chilies in both the marinade and dipping sauce.
