Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes
  • 2 small zucchinis
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Peel and chop the sweet potatoes. Place them in a large baking dish and toss with 2 tablespoons olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper.
  • Bake in the preheated oven for 30 minutes.
  • While the sweet potatoes are baking, heat a skillet over medium heat. Add 1 tablespoon olive oil and brown the ground turkey, seasoning with 1 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper.
  • Chop the zucchinis by slicing and quartering the slices.
  • Remove sweet potatoes from the oven, add cooked ground turkey and chopped zucchinis, and mix well.
  • Return the dish to the oven and bake for another 10 minutes.
  • Drizzle with remaining 2 tablespoons olive oil, mix, and top with shredded parmesan cheese.
  • Bake for another 10 minutes until cheese is bubbly and golden brown.
  • Let cool slightly before serving.
