  • 1.5 cups elbow noodles
  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 2 cups cooked cauliflower rice
  • 1 large red bell pepper, chopped
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 4 cloves garlic, minced
  • 15 oz can of tomato sauce
  • 1.5 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 2 tsp dry mustard
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Cook the elbow noodles according to the package directions. Once cooked, drain and set aside. Tip: Make sure not to overcook the noodles, as they will continue to cook in the oven.
  • In a 10-inch cast-iron skillet, heat the olive oil over high heat. Add the ground turkey and cook for about 4 to 5 minutes, or until lightly browned. Tip: Break up the turkey with a spatula as it cooks to ensure even browning.
  • Add the cooked cauliflower rice, chopped bell pepper, onion, carrots, and minced garlic to the skillet. Stir often and cook for 5 to 7 minutes, until the vegetables are softened. Tip: This step is key for bringing out the flavors in the veggies!
  • Pour in the tomato sauce, brown sugar, Worcestershire sauce, dry mustard, and season with salt and pepper. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium and let it simmer for 2 minutes, stirring occasionally.
  • Stir the cooked elbow noodles into the turkey mixture until well combined. Sprinkle the shredded cheddar cheese evenly on top.
  • Bake in the preheated oven for 5 to 7 minutes, or until the cheese is melted and bubbly. Tip: Keep an eye on the casserole to prevent the cheese from burning.

Notes

For added flavor, consider mixing in some Italian herbs like oregano or basil. You can substitute the ground turkey with any other ground meat of your choice.
