  • 2 tablespoons unsalted butter
  • 1 large red onion, very finely chopped
  • 1 pound ground beef
  • 2 tablespoons tomato paste
  • 1 teaspoon red pepper flakes
  • 1 tablespoon sweet paprika
  • 1 2 cabbage head, thick stem removed, washed and roughly chopped
  • 2 cups beef broth
  • 1 teaspoon cumin
  • 1 teaspoon dried coriander
  • 1 to taste Salt and pepper

Instructions
 

  • In a Dutch oven, melt the butter over medium heat.
  • Add the chopped onion and sauté for about 3-5 minutes, stirring occasionally, until the onion is soft and translucent.
  • Stir in the ground beef, cooking for 5-7 minutes until it’s nicely browned.
  • Mix in the tomato paste, red pepper flakes, paprika, cumin, coriander, and a pinch of salt. Cook for an additional minute.
  • Add the chopped cabbage and pour in the beef broth. Stir everything together.
  • Cover the pot and let it simmer for 20-25 minutes, stirring occasionally, until the cabbage is tender.
  • Taste and adjust the seasoning with salt and pepper as needed.

Notes

For a heartier dish, consider adding some diced carrots or potatoes along with the cabbage.
